Sweetcorn and rocket muffins
- Heat oven to 200 deg C. Grease a 12-hole standard muffin tin. Combine delf raising flour, cayenne pepper, salt, cheddar cheese, sweetcorn, rocket leaves and finely chopped onion in a bowl and make a well in the centre.
- Add milk and eggs to the well and stir just enough to combine - don't over-mix or your muffins will be tough.
- Spoon muffin mixture into the prepared baking tin and bake for 25 to 30 minutes or until muffins are puffed-up and golden brown.
