
Spring bean salad with prosciutto

If you've got a can of white beans in the pantry you've got this delicious summery salad in a minute.
Ingredients
75 g | Prosciutto |
300 g | White beans |
1 cup | Cherry tomatoes |
1 Tbsp | Balsamic vinegar |
2 Tbsp | Extra virgin olive oil |
1 to taste | Salt & freshly ground pepper |
Directions
- Heat grill on high. Place prosciutto on a baking tray and grill for 5 minutes or until crispy. Remove to cool and then break up into bite-sized pieces.
- At the same time,cook the beans in boiling, salted water for 3 minutes or until just tender. Drain well and plunge into ice-cold water to cool. Drain again and toss with cherry tomatoes.
- Drizzle with vinegar and oil, season with salt and pepper, then toss well. Serve garnished with the crisp prosciutto.
