Spring bean salad with prosciutto

If you've got a can of white beans in the pantry you've got this delicious summery salad in a minute.

Ingredients

75 g Prosciutto
300 g White beans
1 cup Cherry tomatoes
1 Tbsp Balsamic vinegar
2 Tbsp Extra virgin olive oil
1 to taste Salt & freshly ground pepper

Directions

  1. Heat grill on high. Place prosciutto on a baking tray and grill for 5 minutes or until crispy. Remove to cool and then break up into bite-sized pieces.
  2. At the same time,cook the beans in boiling, salted water for 3 minutes or until just tender. Drain well and plunge into ice-cold water to cool. Drain again and toss with cherry tomatoes.
  3. Drizzle with vinegar and oil, season with salt and pepper, then toss well. Serve garnished with the crisp prosciutto.
