Spinach-stuffed pasta shells
- Heat oven to 200 degC. Squeeze spinach to remove excess water. Place spinach, cottage cheese and beaten eggs in a bowl. Season with salt and pepper and stir well to combine.
- Add the pasta shells to a saucepan filled with plenty of boiling, salted water. Reduce heat to a simmer and cook gently, stirring occasionally, for 10 minutes. Drain well, taking care not to break the shells.
- Spoon pasta sauce into a 2-litre capacity baking dish. Spoon or pipe spinach and cottage cheese filling into pasta shells and arrange shells on top of pasta sauce.
- Sprinkle with grated parmesan and bake for 30 minutes or until golden brown.
