Organic peanut butter biscuits (gluten-free)
1 cup organic smooth peanut butter 3/4 cup organic natural sugar 1 large egg, lightly beaten 1/2 tsp baking soda 3/4 cup roasted salted peanuts 1. Heat oven to 160°C fan bake. Line two baking
- Heat oven to 160 degC fan bake. Line two baking trays with nonstick baking paper.
- Place peanut butter, sugar, egg and baking soda in a bowl and stir to combine, then stir in the peanuts.
- With damp hands, roll heaped tablespoons of the dough into balls and place on the prepared trays, leaving space for the biscuits to expand during cooking.
- Bake for 12 to 15 minutes, rotating the trays halfway through, or until biscuits are golden brown and puffed. Transfer to a wire rack to cool.
