Christmas mince pastries

- Heat oven to 200C. Cut each sheet of pastry into four equal squares. Make a long V-shaped cut on two opposite corners of each square, ½ cm inside the edge. Place pastry squares on a greased baking tray.
- Brush the edges with water. Lift one corner and fold it over to the opposite corner. Lift the opposite corner and do the same. Prick the central base of the pastry with the tines of a fork.
- Place two teaspoons of fruit mince in the centre of each pastry. Bake 15 to 20 minutes or until puffed and golden brown.
- Remove to a wire rack to cool. Serve dusted with icing sugar.
