Calamari, Tomato and Olive Salad
- Place calamari rings in a bowl, drizzle with olive oil and toss well to coat. Heat a frying pan or barbecue and cook calamari, in two batches, for 1 minute on each side to brown. Remove to cool.
- Halve tomatoes, finely slice red onion into rings and combine calamari with remaining salad ingredients in a bowl. Drizzle with juice of the lemon and olive oil, season with salt and pepper and toss well.
- Serve salad scattered with fresh basil leaves.
