Spicy chicken skewers
- Combine crushed garlic, smoked paprika, fennel seeds and coriander seeds, coarsely ground, vinegar and oil in a bowl to form a marinade. Add small skinless chicken breasts, cut in 3cm cubes and toss well to coat in marinade, then cover and refrigerate to marinate for 1 hour.
- Heat the grill on high. Season marinated cubed chicken with salt and pepper and place on a grill rack. Grill for 5 to 7 minutes on each side until cooked and golden brown.
- Skewer cubes of chicken and arrange on a serving plate. Garnish with coriander.
