If you enjoy a little heat, add a good spoonful of sweet Thai chilli sauce to the mix, which is child-friendly.
- Line a 23cm pie plate with savoury short pastry and place in fridge. You will have leftover pastry.
- Preheat oven to 200C.
- In a large bowl combine all the remaining ingredients except the grated cheese.
- Spread onto a chilled plate, lined with unbaked pastry.
- Bake 200C for 45 minutes and remove from oven. Top with grated cheese and return to oven until the cheese melts.
Resting the pastry in the fridge before baking produces a better result.
