Feta wraps with a herbed yoghurt sauce
Use whatever fillings you desire in this yummy suggestion.
|4 pieces||Mountain bread sheets|
|1||Smoked chicken breast, double, with skin removed|
|⅔ cup||Pepper, chargrilled, sliced|
|½||Red onion, finely sliced|
|100 g||Feta, thinly sliced|
- Make the dressing by combining all the ingredients. Cover and reserve in fridge.
- Place mountain bread on a board. Spoon a little dressing onto the bread, top with salad greens and ¼ of the chicken, chargrilled peppers, red onion and feta.
- Spoon more dressing onto the wrap and roll up. Cut in half and wrap in plastic.
Cook's tip: Make this with leftover food such as roast beef, cooked seafood and cold, chargilled courgettes.
