Cottage cheese muffin loaves
- Heat oven to 180 degC fan bake. Grease 12 mini loaf tins. Place the first nine ingredients in a bowl (ensure celery and oregano is chopped), then add the sifted flour and stir just enough to combine.
- Spoon mixture into the prepared tins until they are three-quarters full. Sprinkle with a little grated cheese.
- Bake for 25 minutes or until golden brown and a skewer inserted in the centre of one mini loaf comes out clean. Remove and place on a wire rack to cool.
