Tortilla salad baskets
Re-work a taco salad with these great individual servings.
- Heat oven to 180C. Spray a six-hole Texas muffin tin with oil. Lightly spray the tortillas with oil. Push one tortilla into each hole of the muffin tin to form a basket - cut tortillas down a little first to fit if necessary.
- Bake for 10 minutes or until golden brown and crispy. Remove to cool completely.
- Fill crisp tortilla baskets with ham or pastrami, halved cherry tomatoes and salad leaves. Drizzle with olive oil just before serving.
