Tikka masala fish
- Heat canola or rice bran oil in a saucepan, add diced onion and cook over a medium heat for 5 minutes. Add tikka masala paste and fry for 1 minute more to release flavours.
- Stir in crushed tomatoes. Add pieces of fish fillets prefarably white and stir gently to cover with sauce. Cover pan and simmer gently for 10 minutes.
- Remove lid and season with salt and pepper to taste. Serve with steamed rice and garnish with a sprig of fresh coriander.
