Courgette and pepperoni stew
- Heat a nonstick frying pan, add sliced sausage and cook for 5 minutes to brown, then drain off fat.
- Add chopped onion, sliced celery and green pepper and cook over a medium heat for 10 minutes, stirring occasionally, to soften. Add chopped garlic and cook for 1 minute more.
- Add chopped tomatoes, water and tomato paste, then simmer for 20 minutes, uncovered, until sauce reduces and thickens.
- Add courgettes and oregano, then simmer for 5 minutes more until courgette is tender. Adjust seasoning with salt and pepper to taste.
