Stuffed pork steak
- To make the stuffing, combine dried coarsely chopped apricots, walnut pieces and fresh sage in a small food processor and process to combine, or else chop very finely on a board. Season with salt and pepper to taste.
- Heat oven to 200°C. Make a large slit in the steak, without cutting all the way through. Spoon the stuffing into the slit and secure with a toothpick. Season New Zealand trim pork steak on both sides with salt and pepper.
- Heat a little oil in an ovenproof frying pan. Brown the pork for two minutes on each side, then transfer the frying pan to the oven. Roast for 15 minutes or until pork is cooked to your liking.
Tip: Serve with a green vegetable on the side and with oven-baked potato wedges, which can be cooked at the same time as the pork.
