Stir-fry chicken udon noodles
- Cook the udon noodles in boiling water for 2 minutes or according to packet instructions, then drain well.
- Heat a wok or frying pan, add a little oil and stir-fry chicken mince for 5 minutes to brown. Remove mince to one side.
- Add a little more oil and stir-fry shredded cabbage, sliced peppers and spring onions (trimmed and cut into lengths) for 2 to 3 minutes over a high heat.
- Add hoisin and soy sauces and return chicken mince to the pan, tossing well. Add noodles and stir-fry, tossing quickly, to heat through. Serve immediately.
