Ingredients

125 g Butter, softened
⅔ cup Icing sugar
⅔ cup Flour
¼ cup Cornflour
⅓ cup Cocoa powder

Chocolate filling

⅓ cup Cream
150 g Dark chocolate

Directions

  1. Heat oven to 160C fan bake. Grease two baking trays or line with non-stick baking paper. Place butter and icing sugar in a bowl and beat with an electric mixer until pale and creamy.
  2. Add flour, cornflour and cocoa and mix to form a dough. On a lightly floured work surface, roll out the dough to 2mm thick. Cut out egg-shaped ovals (or other shapes) using a cookie cutter.
  3. Place biscuits on prepared trays. Bake for 15 minutes or until firm. Remove to wire racks to cool. Sandwich cold cookies together with chocolate filling.
  4. To make chocolate filling, melt chocolate and cream together and stir until smooth. Refrigerate mixture until firm before use.
