Fried rice with tofu
- Cook rice in plenty of boiling, salted water for 12 minutes then drain well in a colander. At the same time, heat a wok, add a little oil and then the cubed tofu, toss and stir-fry over high heat for five minutes, until browned all over. Remove to one side.
- Add a little more oil to the wok then add the finely sliced red pepper, Asian greens (use bok choy or gai larn) and baby corn. Stir-fry for 2 to 3 minutes to brown. Remove to one side.
- Add a little more oil to the wok, then the rice, grated ginger and sweet chilli and soy sauces, tossing over high heat for 5 minutes until lightly browned.
- Return all ingredients to wok and stir-fry for 2 or 3 minutes until hot.
