
Chocolate bread and jam pudding

Chocolate, berries and other fruit give this bread and butter pudding a makeover. A perfect dessert on a cold winter's night.
Ingredients
½ | French stick |
½ cup | Berry jam |
⅓ cup | Sultanas |
½ cup | Chocolate chips |
3 | Eggs |
3 cups | Low-fat milk |
¼ cup | Brown sugar |
2 Tbsp | Cocoa powder |
1 tsp | Vanilla essence/extract |
Directions
- Heat oven to 160 degC fan bake. Spray an ovenproof dish lightly with oil.
- Spread the slices of french bread with jam, then layer in the prepared dish along with the sultanas and half the chocolate chips, so that these are hidden under the bread.
- Whisk together the eggs, milk, sugar, cocoa powder and vanilla, then pour this mixture over the bread. Set aside for 30 minutes for the bread to absorb the milk.
- Scatter the surface with the remaining chocolate chips and bake for 35 to 40 minutes or until puffed and golden brown.
