
Date and walnut loaf

Ingredients
1 cup | Dates, pitted and coarsely chopped |
1 tsp | Baking soda |
1 cup | Black tea, boiling hot |
1 cup | Brown sugar, firmly packed |
1 | Egg, lightly beaten |
1 Tbsp | Butter, melted |
1 tsp | Vanilla essence/extract |
2 cups | Self raising flour |
½ cup | Walnut pieces |
Directions
- Place coursely chopped dates in a bowl. Sprinkle with baking soda and cover with boiling-hot black tea. Set aside for 1 hour for dates to soften and cool.
- Heat oven to 160C. Grease and line a standard loaf tin with baking paper.
- Stir brown sugar, egg, butter and vanilla into the cooled date mixture. Stir in sifted flour and walnuts to just combine. Spoon mixture into prepared loaf tin.
- Bake for 1 hour or until loaf tests cooked when a skewer inserted comes out clean.

added 352 days agoMade it twice and it's so nice , cooked nicely in 50 mins , if low on dates make it up with currants . Will be a regular from now on .
