Date and walnut loaf

Ingredients

1 cup Dates, pitted and coarsely chopped
1 tsp Baking soda
1 cup Black tea, boiling hot
1 cup Brown sugar, firmly packed
1 Egg, lightly beaten
1 Tbsp Butter, melted
1 tsp Vanilla essence/extract
2 cups Self raising flour
½ cup Walnut pieces

Directions

  1. Place  coursely chopped dates in a bowl. Sprinkle with baking soda and cover with boiling-hot black tea. Set aside for 1 hour for dates to soften and cool.
  2. Heat oven to 160C. Grease and line a standard loaf tin with baking paper.
  3. Stir brown sugar, egg, butter and vanilla into the cooled date mixture. Stir in sifted flour and walnuts to just combine. Spoon mixture into prepared loaf tin.
  4. Bake for 1 hour or until loaf tests cooked when a skewer inserted comes out clean.

    Made it twice and it's so nice , cooked nicely in 50 mins , if low on dates make it up with currants . Will be a regular from now on .
