Pear and cornflake crumble
4 pears, peeled and quartered 2 tbsp honey 2 tbsp cold water Juice of 1 lemon CoRNFLAKE CRUoBLE¾ cup flour 75g butter, cubed¹/³ cup raw sugar ¹/³ cup thread coconut 1 cup cornflakes
- Heat oven to 180 degC. Core pears and cut quarters into slices. Place pears, honey, water and lemon juice in a saucepan and simmer for 5 minutes. Remove to an ovenproof dish.
- To make crumble topping, rub butter into flour with your fingertips, or process in a food processor, until mixture looks like breadcrumbs. Stir in sugar, coconut and cornflakes.
- Sprinkle crumble mixture over pears and bake for 20 to 25 minutes or until topping is crisp and golden brown. Dust with icing sugar and serve
