Sausage meatloaf with chilli sauce glaze
|600 g||Pork sausages|
|2 Tbsp||Fresh parsley|
|1 tsp||Curry powder|
|1 to taste||Salt & freshly ground pepper|
Chilli sauce glaze
- Heat oven to 175 degC. Grease a standard loaf tin with oil. Place meatloaf ingredients in a bowl and mix well to thoroughly combine.
- Pack mixture into prepared tin. Bake for 30 minutes. Meanwhile, make the sauce: Combine all sauce ingredients in a saucepan and bring to the boil. Reduce heat and simmer for 5 minutes until thickened.
- Remove the meatloaf from the oven and make holes all over with a skewer. Pour off any excess fat and then pour the sauce over the meatloaf so that it soaks into the holes.
- Return meatloaf to the oven and bake for a further 30 minutes. Remove and slice to serve.
