Red kidney bean dip
- Place rinsed and drained kidney beans, chopped garlic, well chopped sundried tomatoes, tomato paste and olive oil in the bowl of a food processor. Process to combine and coarsely chop (the mixture should still have a rough texture).
- Transfer mixture to a bowl and season with paprika and salt and pepper to taste. Stir to combine.
- Serve with rice crackers or corn chips for dipping.
