Lean apricot chicken
- Heat oven to 210 degC. Place chicken breasts in an oven pan. In a small bowl, combine garlic, soy sauce and sweet chilli sauce.
- Spoon this mixture over chicken breasts to coat.
- Drain the apricots and reserve a quarter-cup of the juice.
- Scatter the apricot halves around the chicken breasts and pour over the reserved juice.
- Bake for 20 minutes or until chicken is golden brown and cooked through.
- Scatter with parsley and serve with the juices from the pan.
