Ginger corned beef
- Place all the ingredients in a pan (grate ginger and chop chilllies). Pour over a little extra cold water to cover the beef, if necessary.
- Bring liquid to the boil, then turn down the heat to a gentle simmer. Cover pan and simmer beef very gently for 1 and 1/2 hours.
- Remove beef to a carving board and slice to serve. Can be served hot or cold.
Corned beef is whole pieces of beef that have been cured or "corned" in seasoned brine (a flavoured salt solution). Corned beef can be purchased from butchers and will usually be labelled "corned silverside". When calculating cooking time, as a rule of thumb you should allow 30 minutes per 500g of corned silverside.
