Ranch eggs with tomatoes
- Heat oil in a medium-sized frying pan. Add finely chopped onion and cook for 5 minutes over a medium heat to soften but not brown. Add the spices, then cook for 1 minute more.
- Add chopped tomatoes and bring to the boil, then reduce heat and simmer for 5 minutes. Add the rinsed and drained black eyed beans and simmer for 5 minutes more. Season with salt and pepper to taste.
- Break each egg into a cup, then slip eggs from cups into tomato mixture. Cover and simmer for 5 minutes or until the eggs are cooked to your liking.
- Scatter with fresh herbs and serve with toast on the side to dip in and sop up the juices.
