Sweet and sour noodles
- Place udon noodles in a bowl, cover with boiling water for two minutes, then drain well and set aside.
- Heat canola or rice bran oil in a wok or large frying pan, add peeled fresh pineapple, cut into chunks and thinly sliced spring onions, then stir-fry for two to three minutes to brown. Add grated fresh ginger, chopped garlic and thawed prawns and stir-fry for two minutes more.
- Add the noodles, sweet chilli sauce and dark soy sauce to the pan. Toss and stir-fry for three minutes to combine ingredients and heat through, adding extra soy sauce as needed to season. Serve immediately.
