Fruity spring greens salad
|100 g||Snow peas|
|150 g||Mesclun leaves|
|3 Tbsp||Fresh mint|
- Toss the thinly sliced apple and pear with the lemon juice to stop the fruit from turning brown. In a large bowl, combine apple and pear with the remaining salad ingredients, except for walnuts and mint.
- Place the dressing ingredients in a small bowl and then whisk to combine. Drizzle dressing over the salad and toss well to combine.
- Arrange on a serving platter and scatter with walnut pieces and mint just before serving.
