Strawberry and cranberry loaf
- Heat oven to 160C fan bake. Grease a standard loaf tin and line with baking paper, leaving an overhang on all sides.
- Place eggs, sugar, vanilla and oil in a bowl and beat with an electric mixer until mixture is pale and sugar has dissolved.
- Stir in the yoghurt, craisins and strawberries. Sift flour, baking powder and soda over the wet ingredients, then stir just enough to combine.
- Spoon mixture into prepared tin. Bake for one hour and 10 minutes or until a skewer inserted in the centre of the loaf comes out clean. Remove to wire rack to cool. Slice to serve.
