Creamy tomato dip
2 medium tomatoes, chopped 2 spring onions, finely chopped Juice of 1 lemon 1 cup low-fat sour cream 2 tbsp tomato paste ½ tsp sugar, or to taste ½ tsp Worcestershire sauce Salt and freshly
- Combine chopped tomatoes and spring onions with the lemon juice, salt and pepper. Leave to stand for 30 minutes, then drain. well and discard the lemon juice
- Combine tomatoes and spring onions with the sour cream. Stir in tomato paste, sugar and Worcestershire sauce. Season with salt and pepper to taste.
- Refrigerate to chill thoroughly before serving. Serve with vege dippers, bread or crackers.
