Roast turkey with cashew stuffing
- Heat oil in a saucepan, add onion and cook for 10 minutes to soften but not colour. Remove to cool. Combine cold onion with the rest of the stuffing ingredients and season well with salt and pepper.
- Heat oven to 180C. Wash turkey and dry inside and out with paper towels. Place turkey in an oven pan. Pack stuffing into the cavity of the turkey and tie legs together with string to keep secure.
- Drizzle turkey with a little extra olive oil and season with salt and pepper. Roast for 2 1/2 hours or according to turkey packaging instructions. Baste regularly.
- Remove turkey from the oven and rest for 10 minutes before slicing. Serve with gravy made with the pan juices.
