- Heat oven to 180 degC (160 degC fan bake). Grease and line a standard loaf tin with baking paper. Place softened butter, sugar and coconut essence in a bowl and beat until pale and creamy.
- Beat in eggs, one at a time, beating well after each addition. Stir in flour, coconut and chocolate bits to combine.
- Spoon mixture into prepared tin. Bake for 45 minutes or until a skewer inserted comes out clean.
- Remove to a wire rack to cool. Dust with icing sugar and slice to serve.
