Warm potato and ham salad
- Cook potatoes in plenty of boiling, salted water for 10 minutes, or until tender. Drain well and set aside to cool a little.
- Cut warm potatoes in half and place in a salad bowl. Cut ham into large pieces and add to the salad bowl along with the pickled onions (thinly sliced) and red pepper strips.
- To make the dressing, combine vinegar, mustard, parsley and olive oil in a small bowl and season with salt and pepper to taste. Whisk to combine.
- Pour dressing over warm salad and toss well to serve.
