- Place beef, lamb or pork sausages in a saucepan of cold water and bring to the boil. Turn down the heat and simmer for 5 minutes then drain and set aside. Once cool enough to handle, dice sausages.
- Heat oil in a frying pan, add chopped sausages to the pan and stir-fry for 5 minutes to brown all over. Add chopped garlic and chopped fresh parsley and cook for 1 minute more.
- At the same time, cook risoni pasta (rice shaped pasta) in plenty of boiling salted water for 10 minutes or until just tender to the bite. Add the frozen peas to the pasta for the last minute of cooking time.
- Drain the pasta and peas and add to the frying pan with the sausage mixture. Adjust seasoning with salt and pepper to taste and toss well to combine. Serve immediately.
