Blueberry Yoghurt Fool
A rich, creamy dessert perfect for a sweet end to a dinner party.
- Combine 1½ cups of blueberries and honey in the bowl of a food processor and process to puree. Lightly whip cream until soft peaks form.
- Fold blueberry puree into whipped cream then fold in the yoghurt.
- Spoon into serving glasses and chill for at least 30 minutes before serving.
- Serve scattered with remaining blueberries.
If made in advance, be sure to re-fold ingredients together before serving because this pudding will separate if left to sit overnight.
