Kumara and bacon square
- Preheat oven to 180degC fan bake. Line a 17 x 27cm slice tin with baking paper with an overhang on all sides.
- Cook kumara in boiling salted water for five minutes until just tender. Drain and set aside. At the same time, heat oil in a non-stick frying pan, add bacon and cook for five minutes to brown. Remove to cool.
- Place eggs and milk in a bowl and whisk to combine, then stir in kumara, bacon, cheese and parsley. Season well with salt and pepper.
- Pour mixture into prepared tin. Arrange sliced tomatoes over the surface. Bake for 35 minutes or until set. Cut into squares to serve warm or cold.
