Green bean and broccoli salad
( SERVES 4 )
We always make extra of this salad as it’s so popular. Top it with toasted flaked almonds.
- For dressing, combine all ingredients, whisk well and season to taste.
- Blanch the beans (baby) and broccoli in boiling salted water for 3 minutes. Drain and refresh in ice-cold water. Drain before use.
- Toss vegetables with the dressing and serve on a platter.
Cook's tip: This salad is the perfect partner to the chicken & tarragon pies. The dressing on the vegetables marries the tarragon flavour perfectly.
