Smoked chicken and avocado salad
|300 g||Smoked chicken breast|
|150 g||Baby rocket|
- Toss peeled and cubed apple and peeled and sliced avocado with lemon juice so that these ingredients do not turn brown.
- Combine cubed smoked chicken breast, sliced roast capsicum and finely sliced spring onions in a large bowl. Stir in the apple, avocado and lemon juice.
- Stir sour cream and pesto together to form a smooth dressing. Season with salt and pepper to taste. Pour dressing over salad and toss to combine.
- Serve mounds of chicken salad on a bed of rocket leaves.
