Melon wrapped in prosciutto
1 rock melon 10 thin slices prosciutto Fresh mint leaves, to serve Lime wedges, to serve 1. Cut rock melon in half. Scrape out seeds with a spoon and discard seeds. Peel melon, then slice into wedges.

- Peel melon, then slice into wedges. Cut slices of prosciutto in half lengthways.
- Arrange melon wedges on a serving platter. Drape one piece of prosciutto over each wedge of melon.
- Garnish with mint leaves and serve with lime wedges to squeeze over.
Tip: There is no need to season the melon as prosciutto is quite salty and adds a complementary flavour to the freshness of the melon.
