Roasted red capsicum with thyme and basil
- Preheat oven to 180 degC. Remove seeds from red capsicums and chop into quarters. Peel and chop red onions lengthways into eighths.
- Place capsicums, red onion and whole garlic cloves in a baking dish, drizzle over oil and season with salt and freshly ground black pepper.
- Cover and cook for 30 minutes.
- Add thyme and basil and cook for a further 10 minutes. Serve warm or at room temperature accompanying meats, cheese or bread.
