- Place the oil, bacon and onion into a large saucepan, cook over medium-low heat until the onions are just tender.
- Add the courgettes, carrots, celery and potatoes, then cook for 2 to 3 minutes.
- Add the stock, tomatoes and their juice. Cover and cook at a gentle simmer for 45 minutes.
- Add the pasta and cook for 8 to 10 minutes until pasta is tender.
