Tuna and sweet corn patties
- Flake tuna (tuna in oil) into a bowl, add curry powder, tomato sauce, 1 egg, corn and 1 cup of breadcrumbs. Combine well. Form mixture into five patties.
- Lightly whisk remaining egg and pour into a shallow bowl. Dust patties with flour and then coat with egg and the remaining breadcrumbs.
- Heat a little oil in a frying pan and cook patties in batches, turning until golden on both sides.
- Serve patties warm with coleslaw or green leafy salad.
