Pork and plum casserole
600g pork pieces 2 onions, peeled, and finely chopped 2 potatoes, peeled and finely sliced 2 tbsp grated root ginger ½ cup plum jam 2 tbsp red wine vinegar ½ cup chicken stock Salt and freshly
- Preheat oven to 180 degC. Place pork (cut into pieces) in a nine-cup capacity ovenproof dish. Place the chopped onion and potato slices over the pork.
- Mix grated ginger, plum jam, vinegar, stock, salt and pepper together. Pour over pork mixture.
- Bake for 2 to 2 1/2 hours.
- Serve with mashed swede and your choice of seasonal greens.
