Penne and garlic tomato chicken
- Heat first measure of oil in a large saucepan and add chicken and garlic. Toss often for 2 minutes. Add oregano, basil and thyme.
- Add tomatoes, tomato paste, capers, salt and pepper. Slowly bring to the boil and cook gently for 10 minutes.
- Bring a large saucepan of salted water to boil and add pasta. Cook until al dente or according to packet directions.
- Drain pasta and stir through chicken mixture with spinach leaves.
