Fish with spinach, orange walnut salad

At this time of year, New Zealand citrus is at its best. our local oranges are fantastic and, even if you're not in an orange-growing area, there are orchardists who will happily send boxes around the

Ingredients

2 Tbsp Flour
4 White-fleshed fish fillets
1 to taste Salt & freshly ground pepper
2 Tbsp Oil
300 g Baby spinach, (1 bag)
¾ cup Walnuts, lightly toasted
2 Oranges, peeled and cut into segments
1 cup Natural yoghurt
2 Garlic cloves, finely chopped

Directions

  1. Dust fish with flour seasoned with salt and pepper. 
  2. Heat oil in a frying pan and pan fry fish for 2-3 minutes on each side.
  3. Toss spinach, oranges and nuts together on a platter.
  4. Combine yoghurt and garlic in a bowl and drizzle over salad.
  5. Serve fish with the tangy salad.
