Greek tart with cherry tomatoes
- Preheat oven to 200C. Line a 23cm tart pan with pastry, trimming to fit as necessary. Bake blind for 10 minutes and then remove weights and bake a further 4 minutes.
- Reduce oven temperature to 180C. Place grated courgettes, tomatoes and olives in a bowl. Crumble over feta cheese.
- Beat eggs, salt and pepper together. Combine egg and courgette mixture and pour into pastry shell.
- Bake for 40 minutes until golden and set.
