Fragrant risoni with sausages
2 tbsp oil 1 onion, finely chopped 2 cloves garlic, crushed Finely grated rind of 1 small lemon 2 tsp smoked sweet paprika 1 tsp ground cumin 1 cup risoni pasta 3 cups hot vegetable stock 1/2 cup currants
- Heat oil in a large saucepan and gently cook onion, garlic, lemon, paprika and cumin. Cook for 3 minutes. Add risoni and stir to combine. Add hot stock and bring to the boil. Cook for 10 minutes. Add currants to the risoni and cook a further minute.
- Toss through mint, orange juice and season with salt and pepper.
- Meanwhile pan fry or grill sausages until cooked and golden. Chop and stir through.
