Sugar-free fruit loaf
This fruit loaf is delicious - if you want to make any changes then alter fruit and nut choices to suit.
- Preheat oven to 180 deg C. Combine apple juice, honey, dates and sultanas, bring to boil and simmer for three minutes. Cool.
- Mix in cooked, mashed pumpkin and egg, then combined flour, baking soda, mixed spice and walnuts.
- Pour batter into a lined 23cm loaf pan and bake for 1 hour.
