We all need to eat more broccoli. This salad is so good that there won’t be leftovers.
- In a large saucepan, bring water to boil. Add broccoli and cook for only 2 minutes. Blanch in cold water and drain. Cool and chill.
- In a screw top jar, add oil, lemon juice, bacon and dijon mustard. Shake well, and then add chopped egg.
- Season dressing with salt and pepper and pour over the chilled broccoli just before serving.
