Mediterranean beef parcels
1 tbsp oil1 onion, finely chopped2 cloves garlic, chopped250g button mushrooms, chopped1 1/2 cups fresh breadcrumbs2 tbsp chopped parsleySalt and freshly ground black pepper6 beef schnitzels2 tbsp oil1
- Heat oil in a frying pan, add chopped onion and cook for 5 mins to soften. Add chopped mushrooms and chopped garlic and stir-fry for 5 mins more to brown.
- Cool mixture and combine with parsley and breadcrumbs. Season well. Place each schnitzel between sheets of plastic wrap on a board and pound with a mallet until thin.
- Divide filling between schnitzels. Fold in sides of meat, roll up and secure with string. Heat oil in a frying pan and sear parcels for 5 mins to brown evenly. Set aside.
- Add butter to frying pan and stir in flour. Add wine and stock, stirring until smooth. Simmer until sauce thickens. Return parcels to pan and simmer for 5 mins. Serve immediately.
