Beef hokkein noodles with water chestnuts
Kids will love the noodles in this Asian inspired beef dish.
- Place hokkien noodles in a bowl of boiling water for 2 minutes to soften and separate, then drain well.
- Heat a wok, add a little oil and cook water chestnuts and peppers (cut into large chunks), tossing over a high heat for 3 to 4 minutes until lightly charred. Remove to one side.
- Add a little more oil to the wok and brown the beef in two batches, tossing over a high heat for 3 to 4 minutes.
- Return vegetables to the wok with the drained noodles, hoisin and soy sauce and stir-fry for a few minutes until hot. Taste, then add more soy sauce to season if necessary. Serve scattered with fresh basil.
